AFF 2020 - Advanced Beef Fabrication

This course advances student proficiency in beef carcass utilization, building upon essential fabrication skills. Students develop expertise in precision cutting of sub-primals into value-added and specialty cuts, with an emphasis on yield efficiency and adapting fabrication for diverse market requirements such as foodservice, retail, and wholesale. Key concepts include product merchandising, cost control, and strategies for waste reduction.
