AHS 2360 - Introduction to Food Science 3 cr
This course uses science to unlock the mysteries of food and cooking. It explores the scientific principles that underlie culinary phenomena and applies them to explain the properties of foods and how certain food preparation techniques work. Students also explore the role of food in other cultures. The class is structured as an integrated lecture-lab and laboratory activities will provide hands-on opportunities to put these scientific principles to the test in the lab.
